Four years ago Mike and I were preparing for our first holiday season as a couple. There was mistletoe, twinkle lights and nights spent talking about how excited we were for presents and family time. One of the things that Mike was the most excited about were his sister’s snickerdoodles. Being the cute girlfriend I was at the time, I decided to work on making him some of my own. These cookies always come out perfectly, and Mike goes to town on them. And best of all, they are really fun and easy to make!
Makes 2 dozen (you will want to double this!)
1/2 stick of butter, at room temp
1/4 cup shortening, at room temp
3/4 cup granulated sugar
1 egg, at room temp
2 tspn vanilla extract
1 1/3 cup flour
1 tspn cream of tartar
1/2 tspn baking powder
a pinch of salt
2 tspn ground cinnamon
2 tbsp granulated sugar
Preheat your oven to 400 degrees. Cream the butter, shortening and sugar together in the bowl of a stand mixer (or using a hand mixer). Add the egg and vanilla and mix well. Combine the dry ingredients EXCEPT the cinnamon and extra sugar. Gradually add the dry ingredients into the wet until fully incorporated. Mix the cinnamon and sugar together. Roll the dough into 1 inch balls and then ball them in the cinnamon-sugar mixture. Place them on a prepared baking sheet and bake for 10 minutes. Let rest for several minutes before moving to a cooling rack.
