There’s something about lazy weekend mornings. I typically wake up and want to make something kickass for breakfast. There is usually a small caveat to my plans… my husband. Mike isn’t a “breakfast lover” so it can take some sweet talk to get him on board for weekend breakfasts. However, once that’s handled, it’s game time.

One of my favorite weekend treats are waffles. It’s not an all-the-time kind of thing, which is why I enjoy it so much I think. This week of the challenge was apple themed… So I thought it was only natural to get my apple waffle on! When I posted this on Reddit, I made the mistake of typing pancake instead of waffle. Hilarity ensued. Mostly it was me laughing at how big of an idiot I am. I digress.


Apple Cinnamon Waffles

Serves 2

1 egg
1 cup flour
1 cup milk
1 tbsp granulated sugar
2 tspn baking powder
1/2 tspn vanilla extract
1 pinch of salt
1 apple, cored and diced
1/2 tspn ground cinnamon

Combine the wet ingredients in the bowl, then mix in the dry ingredients. Heat your waffle iron, spray with non-stick cooking spray.

Spoon a ladle full of the batter onto the iron. Cook until done! Repeat with remaining batter.
